Ingredients
  

  • 1 cup Grated Beets
  • 1 tbsp olive oil
  • 1 tbsp lemon juice

Instructions
 

  • Mix together well, massage in oil and lemon into beets. 4-5 servings worth can be made in advance,then stored in refrigerator for up to 4-5 days. It actually gets better over time.
    Options - goat cheese, apples, pears, fruit, nuts, figs, olives
